Vegan Key Lime Pie Recipe

Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tbsp melted vegan butter or coconut oil
  • 4 flax eggs (4 tablespoons ground flaxseed mixed with 12 tablespoons water)
  • 1 can full-fat coconut milk (14 oz)
  • 1/2 cup Key lime juice
  • 1 tbsp grated lime zest

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted vegan butter or coconut oil until well mixed. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  • In a separate large bowl, whisk together the flax eggs, coconut milk, Key lime juice, and lime zest until well combined. Pour the mixture into the prepared pie crust.
  • Bake the pie for 15-20 minutes, or until the filling is set and the crust is lightly golden.
  • Let the pie cool to room temperature, then chill it in the refrigerator for at least 3 hours.
  • To serve the pie, top it with coconut whipped cream or meringue, and garnish with additional lime zest if desired.
