Sausage Stuffing Recipe for Mushrooms
We just love stuffing, and normally we only get to have it once a year during Thanksgiving. Although we usually use crab meat to stuff mushrooms, this sausage stuffing is delicious!
4 cups toasted bread cubes
(we have also used 2-3 cups of Italian seasoned bread crumbs)
1 pound of sausage
1 cup diced mushrooms
3 celery stalks diced
1 shallot diced
1/2 cup butter
8 ounce of chicken broth
Salt & pepper to taste
Brown the sausage with the shallot, celery and mushrooms over lot to medium heat until sausage is cooked through. Add butter and 1/2 of the chicken broth. In a separate bowl mix breadcrumbs with salt & pepper. I also add 2 tbsp sage.
Stuff mushrooms and bake for 12 to 14 minutes until lightly browned.
Drizzle with a touch of olive oil, sprinkle a little Parmesan cheese & parsley and enjoy!
Optional tip: I like to add 1/4 cup of white wine (I happen to have Pinot Grigio on hand at all times lol,) when cooking the shallots, celery and mushroom mix for added flavor.
