Cinco De Mayo Recipes
You can get into the Cinco de Mayo spirit by eating some delicious Mexican dishes. None of these recipes are hard to make and are pretty inexpensive as well. Nachos For Everyone
You’ll Need:
– 1 large bag of tortilla chips (at least 13 ounces)
– 1 head of lettuce, finely chopped
– 8 ounces shredded Mexican cheese blend
– 2 cups chili
– ½ cup queso sauce
– ½ cup sliced black olives
– 1 cup sour cream
– 1 cup tomatoes, diced
To Make:
Preheat the oven to 350 degrees. Spread the tortilla chips onto a pan and sprinkle the cheese on top. Bake for about 10 minutes until the cheese is melted. Place the queso sauce and chili in a microwave safe dish and heat for about a minute. Stir the mixture and pour it over top of the chips and cheese. Sprinkle the lettuce on top. Spoon the sour cream on top and sprinkle on the black olives and tomatoes.
Jalapeno Poppers
You’ll Need:
– 20 jalapeño peppers
– 1 cup shredded cheddar cheese
– 1 cup cream cheese
– 1 cup bacon, cooked and crumbled
To Make:
Preheat the oven to 400 degrees. Cut the stems off of the peppers and cut the peppers lengthwise in half. Scoop out the insides of the peppers to remove the seeds. Place the cream cheese, bacon and ½ of the shredded cheese in a bowl and stir together. Place about 1 teaspoon of the mixture into each half of the jalapeños. Place the jalapeños on a baking sheet, with the filled side facing up. Sprinkle the remaining shredded cheese onto of each jalapeño. Bake for about 5-7 minutes until the cheese is completely melted.
Easy Mexican Rice
You’ll Need:
– 1 cup uncooked white rice
– 1 garlic clove, minced
– 2 teaspoons onion powder
– 1 cup tomato sauce
To Make:
Cook the rice according to the package instructions. Pour in the tomato sauce and garlic in with the rice and stir. Cook on low for 2-3 minutes. Add in the onion powder and stir.
