Lasagna Roll Ups Recipe
- A couple of teaspoons of Olive oil for the bottom of the pan
- 1 lb lean Ground turkey
- 1 garlic clove minced
- 1 medium onion
- 1 bag of fresh spinach (you can steam the spinach beforehand or just throw it in batches)
- 1/2 cup of Parmesan cheese
- 2 1/2 cups of tomato sauce (you can make your own, or we use can sauce)
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1/4 teaspoon sea salt
- 8-10 Lasagna noodles (we use the brown rice noodles, but regular noodles are fine.)
- 1/2 cup grated low fat cheese (Optional) (we like the use the rice or veggie mozzarella cheese)
Bring a pot of water to a boil and cook lasagna noodles are instructed on the box.
In a large pan – Cook the ground turkey or medium high low heat with a little olive oil, onion, and garlic.
Once meat is cooked stir in the spinach if precooked or throw it in batches till the whole pack is in. Then add in the parmesan cheese, and 1 1/2 cups of the tomato sauce as well as the basil, oregano and sea salt.
Spread the remaining cup of sauce at the bottom of the pyrex or baking dish. Roll the meat mixture in the lasagna noodles and place on top of the sauce in the pyrex – cover the rolls with any remaining sauce
Cover and bake for 25 minutes at 350, until hot and bubbly. And I top with mozzarella sometimes when it has about 5 minutes left. Be careful not to overcook it because once the lasagna noddles turn brown they get crispy and hard to chew.
Makes about 4 servings
- Variations to this recipe are to instead of using lasagna noodles put the turkey mixture inside of a red or green pepper or zucchini.
